We love pancakes and all kinds of pancakes. Gluten-free oatmeal pancakes, healthy carrot cake pancakes, coconut flour pancakes, cottage cheese pancakes, and everything in between.

Why only 3 simple ingredients? Many people who need an allergen-friendly pancake recipe have made these 3 ingredient almond flour pancakes and LOVED them.

Today we are sharing a Fit Foodie pancake favorite and they’re only made with 3 ingredients! Not only are these almond flour pancakes easy to make, but the taste amazing and the consistency is also cake-y and delicious. Here’s what you need:

  1. Blanched almond flour: Almond flour is essentially just ground almonds, which makes this flour grain-free. Make sure to specifically use blanched super-fine almond flour and you will get the best results. We recommend Bob’s Red Mill.
  2. Eggs: Eggs are an important part of this recipe as it will help bind the almond flour and banana and make them cake-y like…pancakes! Plus, they add a ton of protein.
  3. Banana: Banana adds a wonderful all-natural sweet flavor to these pancakes that make these cakes taste just like classic banana pancakes.

Can I replace regular flour with almond flour?

No, you cannot substitute almond flour for all-purpose flour (or any kind of flour for that matter). Almond flour absorbs liquid quite differently than glutinous flours, so if you would like to use all-purpose flour I would find a recipe that calls for that specific flour.

Is almond flour high in carbs?

No! Almond flour is one of the healthiest low carb flour options on the market. In 1/4 cup of almond flour, there are about 6 grams of carbs.

Is almond meal the same as almond flour?

They are essentially the same thing, but typically almond flour is more finely ground making it better to bake and cook with.

What is the difference between blanched and unblanched almond flour?

Blanched almond flour uses blanched almonds. Blanched almonds mean that the darker, outer shell is removed and you are left with a shiny, cream color almond! Unblanched just means that a whole almond was used.

Can you freeze almond flour pancakes? 

Yes, you can freeze almond flour pancakes. Let pancakes cool completely. Then, tightly wrap pancakes with tinfoil and remove as much air as possible. Store in the freezer for up to 3 months.

How do you reheat frozen pancakes?

To prepare the almond flour pancakes after they’ve been frozen, pop them in the toaster or in the microwave and enjoy!

Are almond flour pancakes gluten free?

Yes! Almond flour is naturally gluten-free. Just be sure to check and see if the almond flour you buy is certified gluten free if you are celiac and you’re good to go.

Can you make almond flour pancakes vegan? 

We do not suggest replacing the eggs for a vegan option as there are only 3 ingredients and eggs are a big part of this recipe.

Ingredients

  • 1.5 cups blanched, super-fine almond flour
  • 3 large eggs
  • 1 medium ripe banana
  • optional: 1 teaspoon baking powder

Instructions

  1. In a blender or food processor, blend banana and 1 egg until there are no large lumps in the banana.*
  2. Then, place mixture into medium size bowl and add in the other 2 eggs. Whisk until combined. Finally add almond flour and baking powder and mix until smooth.
  3. Heat a nonstick pan to low/medium heat and spray with nonstick cooking spray. Note that low/medium heat is important! You don’t want your pan too hot or it won’t cook fully in the middle.
  4. Using a 1/4 measuring cup, scoop batter onto pan. Let cook for around 2 to 3 minutes per side.
  5. Repeat until there is no more batter.
