10 Healthy Vegan Dinner Recipes for Easy Weeknight Meals

Most healthy vegan dinner recipes fail the same test. They look good saved to a folder, then you open one at half past six and it wants ninety minutes, a blender and something you have never bought. What follows is the opposite of that.

Ten complete dinners, ordered from fastest to slowest, every one of them under forty five minutes. Full ingredient lists, real methods, nothing you cannot find in an ordinary supermarket. If you are cooking for a family too, these easy healthy dinners for kids pair well with most of them.

🍽 The Formula Behind All Ten

Ten recipes will get you through a fortnight. The pattern underneath them will get you through a year. Almost every satisfying plant based dinner is the same four things arranged differently, and once you can see it you stop needing a recipe to make something good.

Row four is the one people skip, and it is the single reason plain vegan food tastes plain. A sauce turns four separate ingredients into a meal. Row one is where your protein comes from, so it helps to know which high protein vegan foods carry the most per serving.

🥜 1. Peanut Noodles

⏱ 10 minutes · 🍽 Serves 2 · 🌶 Very easy

Ingredients

  • 200 g noodles, any kind
  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • Juice of 1 lime
  • 1 tsp maple syrup
  • 1 garlic clove, grated
  • Cucumber, spring onion, crushed peanuts to finish

Method

  1. Cook the noodles according to the packet.
  2. While they boil, whisk the peanut butter, soy sauce, lime juice, maple syrup and garlic together, loosening with hot water a spoonful at a time until it pours.
  3. Drain the noodles and toss them straight into the sauce while still hot.
  4. Top with cucumber ribbons, sliced spring onion and crushed peanuts.

💡 Tip: use the noodle water rather than tap water to loosen the sauce. The starch helps it cling instead of pooling at the bottom of the bowl. A Thai peanut sauce works here if you want something richer.

🌮 2. Black Bean Tacos

⏱ 15 minutes · 🍽 Serves 2 · 🌶 Very easy

Ingredients

  • 1 tin black beans, undrained
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Juice of half a lime
  • 6 small tortillas
  • Red cabbage, shredded
  • 1 avocado, sliced
  • Hot sauce

Method

  1. Tip the beans into a pan with their liquid, add the cumin and paprika, and bring to a simmer.
  2. Mash roughly half of them against the side of the pan so the mixture thickens and holds together.
  3. Cook another five minutes until most of the liquid has gone. Add the lime juice and salt.
  4. Warm the tortillas in a dry pan, then fill with the beans, cabbage, avocado and hot sauce.

💡 Tip: do not drain the tin. That liquid is what makes the filling creamy rather than dry. Black beans also happen to be one of the better potassium sources on a plant based diet.

🍜 3. Crispy Tofu Stir Fry

⏱ 20 minutes · 🍽 Serves 2 · 🌶 Easy

Ingredients

  • 1 block firm tofu (about 280 g)
  • 2 tbsp cornflour
  • 3 tbsp neutral oil
  • 1 bag frozen stir fry vegetables
  • 2 garlic cloves, sliced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp soy sauce
  • Cooked rice, to serve

Method

  1. Press the tofu between two plates with something heavy on top for ten minutes, then cut into cubes.
  2. Toss the cubes in cornflour and a good pinch of salt until evenly coated.
  3. Fry in hot oil, turning only when each side has properly browned. Move them too early and the coating comes off. Set aside.
  4. Add the frozen vegetables to the same pan on high heat, then the garlic, ginger and soy sauce.
  5. Return the tofu, toss once, and serve over rice immediately.

💡 Tip: cornflour is the whole trick. Without it tofu goes rubbery, with it you get a proper crust that holds up to sauce.

🍛 4. Red Lentil Dal

⏱ 25 minutes · 🍽 Serves 4 · 🌶 Easy

Ingredients

  • 200 g red lentils, rinsed
  • 1 onion, diced
  • 3 garlic cloves, crushed
  • 1 tbsp fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 700 ml water or vegetable stock
  • Juice of 1 lemon, fresh coriander

Method

  1. Soften the onion in oil for five minutes, then add the garlic and ginger for one more.
  2. Stir in the cumin, coriander and turmeric and cook for thirty seconds until fragrant.
  3. Add the lentils and liquid, bring to a boil, then simmer uncovered for twenty minutes, stirring now and then.
  4. The dal is ready when the lentils have collapsed and it coats a spoon. Finish with lemon juice, salt and coriander.

💡 Tip: add the lemon at the very end, off the heat. Cooked into the pot it turns flat and slightly bitter.

🍳 5. Chickpea Shakshuka

⏱ 25 minutes · 🍽 Serves 3 · 🌶 Easy

Ingredients

  • 1 onion, sliced
  • 2 red peppers, sliced
  • 3 garlic cloves, sliced
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tin chopped tomatoes
  • 1 tin chickpeas, drained
  • 4 tbsp thick plant yoghurt
  • Crusty bread, to serve

Method

  1. Cook the onion and peppers in a wide pan over medium heat for ten minutes, until properly soft rather than just translucent.
  2. Add the garlic, cumin and paprika, and cook for a minute.
  3. Tip in the tomatoes and chickpeas, season, and simmer for ten to twelve minutes until thick enough that a spoon leaves a trail.
  4. Make hollows in the sauce and spoon the yoghurt into them. Serve straight from the pan with bread.

💡 Tip: the ten minutes on the peppers is not padding. Rushing that step is the difference between a sauce that tastes sweet and one that tastes raw.

🍝 6. Sweet Potato Mac and Cheese

⏱ 30 minutes · 🍽 Serves 4 · 🌶 Easy

Ingredients

  • 1 large sweet potato (about 400 g), peeled and cubed
  • 400 g pasta
  • 4 tbsp nutritional yeast
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 150 ml plant milk, unsweetened
  • 2 large handfuls spinach

Method

  1. Boil the sweet potato until a knife slides through easily, around fifteen minutes. Reserve a mug of the cooking water before draining.
  2. Cook the pasta in a separate pan.
  3. Blend the sweet potato with the nutritional yeast, mustard, garlic powder, plant milk and a good pinch of salt until completely smooth, adding cooking water until it pours like a thick custard.
  4. Stir the sauce through the drained pasta with the spinach, which will wilt in the residual heat.

💡 Tip: the mustard is doing more work than it looks. Sweet potato is naturally sweet and without something sharp the whole dish tastes like dessert.

🍔 7. Lentil and Walnut Burgers

⏱ 35 minutes · 🍽 Makes 6 · 🌶 Moderate

Ingredients

  • 1 tin green or brown lentils, drained and patted dry
  • 100 g walnuts, toasted
  • 3 tbsp raisins
  • 60 g breadcrumbs
  • 1 tbsp wholegrain mustard
  • Buns, lettuce, red onion to serve

Method

  1. Pulse the walnuts in a food processor until coarse, not powdered.
  2. Add the lentils, raisins, breadcrumbs, mustard and plenty of salt. Pulse in short bursts until it just holds together when squeezed. Stop while there is still texture.
  3. Shape into six patties and chill for at least fifteen minutes. Skipping this is why veggie burgers fall apart.
  4. Fry in a little oil over medium heat, four minutes a side, moving them as little as possible.

💡 Tip: pat the lentils genuinely dry before they go in. Wet lentils make a mixture that will not hold whatever else you do to it.

🥘 8. Moroccan Chickpea Bake

⏱ 35 minutes · 🍽 Serves 4 · 🌶 Easy

Ingredients

  • 2 tins chickpeas, drained and dried
  • 3 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp cinnamon
  • 1 tbsp harissa paste
  • 1 tin chopped tomatoes
  • 8 dried apricots, chopped
  • Couscous, hummus and parsley to serve

Method

  1. Heat the oven to 200C. Toss the chickpeas with the oil, cumin, cinnamon and salt, spread on a tray and roast for twenty five minutes until crisp at the edges.
  2. Meanwhile simmer the tomatoes, apricots and harissa in a pan for fifteen minutes until jammy.
  3. Prepare the couscous according to the packet.
  4. Spoon the sauce over the couscous, pile the roasted chickpeas on top, and finish with hummus and plenty of parsley.

💡 Tip: keep the chickpeas and the sauce separate until the plate. Combined in the pan they soften within minutes and you lose the contrast that makes the dish work.

🍲 9. White Bean and Kale Soup

⏱ 40 minutes · 🍽 Serves 6 · 🌶 Easy

Ingredients

  • 1 onion, 2 carrots, 2 celery sticks, all diced
  • 4 garlic cloves, crushed
  • 1 tbsp fresh rosemary, chopped
  • 2 tins cannellini beans, drained
  • 1.2 litres vegetable stock
  • 200 g kale, stems removed and shredded
  • Olive oil and lemon to finish

Method

  1. Cook the onion, carrot and celery gently in olive oil for ten minutes without colouring them.
  2. Add the garlic and rosemary for a minute, then the beans and stock. Simmer for twenty minutes.
  3. Blend one ladleful and stir it back in. This thickens the soup without cream and without a blender full of hot liquid.
  4. Add the kale and cook five more minutes. Finish each bowl with olive oil and a squeeze of lemon.

💡 Tip: this is the best keeper on the list. Four days in the fridge, and it is noticeably better on day two than day one.

🍄 10. Mushroom Butter Masala

⏱ 40 minutes · 🍽 Serves 4 · 🌶 Moderate

Ingredients

  • 500 g mushrooms, quartered
  • 1 onion, 4 garlic cloves, 1 tbsp ginger
  • 2 tsp garam masala
  • 1 tsp turmeric, half tsp chilli powder
  • 1 tin chopped tomatoes
  • 3 tbsp vegan butter
  • 100 ml plant cream
  • Rice or flatbread to serve

Method

  1. Fry the mushrooms in a dry hot pan until they squeak and brown. Set aside.
  2. In the same pan, soften the onion, then add the garlic, ginger and spices for a minute.
  3. Add the tomatoes and 100 ml water, simmer ten minutes, then blend until completely smooth and return to the pan.
  4. Stir in the vegan butter and cream over low heat, then fold the mushrooms back through and warm for five minutes.

💡 Tip: dry fry the mushrooms first. Adding oil at the start makes them steam in their own liquid and they never brown properly.

  • Tinned chickpeas, black beans, cannellini beans and lentils
  • Red lentils, dried
  • Coconut milk and tinned chopped tomatoes
  • Tahini, peanut butter and soy sauce
  • Nutritional yeast
  • Cumin, smoked paprika, turmeric, garam masala, cinnamon
  • Frozen stir fry vegetables and spinach
  • Rice, pasta, couscous and tortillas

💛 Final Thoughts on These Healthy Vegan Dinner Recipes

The hardest part of eating this way is almost never the cooking. It is the six o’clock decision, made while hungry, with nothing obvious in the fridge. Ten dinners you can genuinely make removes more of that friction than a hundred you have only bookmarked.

Pick two or three from the first half of this list and cook them until you no longer need to read anything. That is what a weeknight rotation actually is, and it is a much smaller ask than it sounds. The longer recipes are there for the evenings when cooking is the point rather than the obstacle.
